This salad is an America classic, dating back to 1893 when it was created at the Waldorf Astoria Hotel in New York City. With the addition of pressed tofu, this salad now takes on the status of a complete meal; just serve with your favourite bread or wrap into a tortilla. It also makes a great appie or starter served with pita chips.
If you’re not a fan of mayo, try substituting plain yogurt for an even healthier and lighter recipe. You can also use grapes instead of the raisins, sprinkle with chopped walnuts… use your culinary creativity!

INGREDIENTS
3 Tbsp. low fat, cholesterol free mayonnaise
1 Tbsp. fresh lemon juice
½ tsp. salt
¼ tsp. fresh ground pepper
1 sweet apple (Granny Smith works nicely), chopped
½ cup celery, thinly sliced
½ pkg Soyganic Pressed Tofu or Sunrise Pressed Tofu , cubed
¼ cup raisins
Lettuce leaves
DIRECTIONS
1. In a medium sized bowl, whisk together the mayonnaise and the lemon juice
2. Add salt and fresh ground pepper
3. Mix in the apple, celery, tofu, and raisins until fully coated with the dressing
4. Serve atop a bed of lettuce
