Classic Spinach Tofu Dip

Spinach dip, so rich and creamy, is a popular appetizer, but a diet pitfall. Try our version with medium firm tofu and light mayo for a healthy and guilt-free alternative!

Serve with veggies or go for the classic bread bowl.

PREP TIME: 10 min plus 1 hour to chill   SERVINGS: Approximately 25 appy size

INGREDIENTS

1 pkg (454 g) Sunrise Medium Firm Tofu
1 cup water chestnuts, chopped
300g frozen chopped spinach, defrosted
1 pkg (40g) vegetable soup mix
1 cup light mayonnaise

DIRECTIONS

1.    Put the tofu in a food processor and blend until smooth. Transfer tofu to a medium bowl.
2.    Drain the water chestnuts and cut them into small pieces.
3.    Add the chestnuts, spinach, soup mix and mayo to the tofu and mix well.
4.    Cover and refrigerate for at least one hour.
