Who would’ve thought… tofu on a pizza! Crumbled extra firm tofu takes on the texture of feta cheese, while adding a much needed protein boost to a standard vegetarian pizza. This pizza can be topped with any vegetables you like… add in your favourites, or be adventurous and try out some new combinations.
These vegetarian neatballs make a great alternative to meatballs served with spaghetti and tomato sauce.  They are nice too in a pita sandwich  stuffed with lettuce, tomato and your favourite tzaziki sauce. Organic fans can substitute Soyganic Extra Firm Tofu . 
Lasagna is one of the easiest ways to incorporate tofu into your diet. Crumbled firm tofu nicely takes on the role of cottage cheese, and blends in perfectly – for most, it is difficult to tell that there is tofu in the lasagna at all. This simple recipe makes a quick and fuss free dinner, just add a tossed salad and some crusty bread.

Paninis make a great meal in a hurry. This version uses Italian ingredients such as pesto sauce, artichokes and olives, to pack a flavourful punch without much fuss. Throw in some cheese and tofu slices for protein, and you’ve got a complete and tasty meal ready to eat in less than 10 minutes.   Prep time: 5 minutes   Cooking time: 1-2 minutes   Servings: 4 (or 1 -2  for big appetites)     INGREDIENTS
Paninis, while a fairly new trend in North America, are an Italian staple, to be found at any street side café. Recreate your own little slice of Italy with this vegetarian Panini bursting with Mediterranean flavours. Tofu slices, while not a traditional ingredient, adds a much needed protein boost to make this Panini a complete meal on its own. Feel free to substitute your favourite veggies; think grilled zucchini or red pepper, and come up with your own twist on an Italian classic. Presto!
