For those who are lactose intolerant or cutting the dairy out of their diets for health or environmental reasons, delicious Greek Salad is sadly a no-no. No anymore! Try this version, bursting with Mediterranean flavours, with firm tofu masquerading as feta cheese.

This salad is an America classic, dating back to 1893 when it was created at the Waldorf Astoria Hotel in New York City. With the addition of pressed tofu, this salad now takes on the status of a complete meal; just serve with your favourite bread or wrap into a tortilla. It also makes a great appie or starter served with pita chips.
This couscous salad makes a great portable meal on its own, or a tasty, protein packed side dish.  If you are a fan of curry, try adding a few dashes to the boiling water, to add an extra jolt of exotic flavour to the couscous.
This slaw salad is made with a tangy Asian inspired dressing. Craving the classic? Substitute the vinaigrette with your favourite creamy dressing. Pressed for time? Use a prepackaged coleslaw mix in place of the carrots and cabbage in the recipe for a shortcut.
