Banana muffins fresh out of the oven... it doesn't get much better than that! This version, powered up with soft tofu, makes a great start to the day or a perfect snack to pack in a lunch bag.

INGREDIENTS:
1 pkg. (300 g) Sunrise or Soyganic Soft Tofu
1 ½ cups flour
1/4 cup wheat germ
2 tsp. baking powder
1 tsp. baking soda
1/4 cup trans fat free margarine, softened
1/4 cup brown sugar
3 ripe bananas, mashed
½ cup raisins
Dash salt
DIRECTIONS:
1. Preheat oven to 190ºC (375 F).
2. Mix all dry ingredients together.
3. Cream margarine, then add sugar and mix well.
4. Add soft tofu and blend with mixer until smooth.
5. Add mashed bananas to tofu and mix together.
6. Pour liquid ingredients into dry ingredients. Stir until flour is moistened. Fold in raisins.
8. Spoon mixture into a lined or greased muffin pan.
9. Bake for 20 -25 minutes.
