This tofu dessert can be best described as "masarap" (delicious!) to most Filipinos. It's called Taho, and it's an extremely popular dish among many South Asian countries including the Philippines. Here, brown sugar is heated and caramelized to create a succulent syrup which is then mixed together with soft tofu. It's a dessert that will definitely satisfy your sweet tooth.

INGREDIENTS
1 pkg (500 g) Sunrise Premium Extra Soft Tofu
1 cup brown sugar, lightly packed
½ cup water
½ cup uncooked large tapioca pearls
4 cups water
DIRECTIONS
1. Boil 4 cups of water in a large pot. Add tapioca pearls and mix well.
2. Cook for 40 minutes on low heat until the pearls are translucent. Stir occasionally to ensure the pearls don't stick together or onto the bottom of the pot.
3. Drain the pearls through a sieve and rinse with cold water. Return the pearls to the pot. Cover with a lid and set aside.
4. In a shallow pan, cook the brown sugar and the remaining ½ cup of water until the sugar is completely melted. Simmer on low heat for another 5 minutes.
5. Divide the tofu evenly into 4 glasses. Heat each glass for 30 - 45 seconds in the microwave until the tofu is warmed through.
6. Divide the pearls evenly between the 4 glasses and top with the desired amount of brown sugar syrup.
7. Serve immediately.
