Fried rice is a popular Chinese dish made up of a combination of vegetables, seafood and meat. Try this meatless version using smoked tofu, great as a side dish or on its own. It is best to use leftover cooked rice or rice that has been chilled to prevent the rice grains from sticking together.

1. Heat oil in large frying pan or wok on high.
2. Add cooked rice, stir constantly for 1-2 minutes
3. Add scrambled eggs , stirring constantly
4. Add peas, carrots, and shrimp. Cook for 2-3 minutes until warm. Add soy sauce & salt as needed
5. Add diced smoked tofu. Serve when warmed through.
