INGREDIENTS
1 package Sunrise Extra Firm Tofu, or Soyganic Extra Firm Tofu, crumbled to a medium size
2 Tbsp canola oil
1 cup water
2 cubes vegetable bouillon (10.6g per cube)
6 tsp poultry seasoning
2 cups chopped celery
2 cups chopped onion
6 cups dry coarse bread crumbs
Optional ingredients: 1 cup dried cranberries or 2 small peeled and diced green apples to be added with the celery and onion portion of the recipe
INSTRUCTIONS
1. Preheat the oven to 350ºC.
2. In a saucepan, boil the water and then take it off the heat. Add the bouillon cubes and the poultry seasoning and set aside.
3. Heat up the oil in a large frying pan and add the crumbled tofu.
4. Fry the tofu for about 5-8 minutes to remove some of the moisture.
5. Add the onions and the celery and sauté the entire mixture until the vegetables are translucent and the tofu is slightly browned.
6. Take pan of the heat and add the coarse bread crumbs. Mix well with tofu and vegetable portion.
7. Add the water, spice and bouillon mixture into the frying pan and mix well with the dry ingredient. Transfer into a greased 9x12 tray.
8. Bake the stuffing for about 40 minutes or until the top is golden brown.
