These Asian-inspired tofu wraps made with whole wheat tortillas make an attractive and healthy appetizer spread. High in protein, with an excellent source of Iron and good source of Calcium, this is a healthy vegan snack that also makes a delicious lunch option for those on-the-go. If you are not a fan of baby corn, you can easily substitute another vegetable, such as carrot or cucumber.

INGREDIENTS
1 pkg whole wheat tortillas (12 pieces)
1 cup plain low fat cream cheese
1 can (300g) baby corn, sliced in half lengthwise
3 bunches green onions, finely chopped
½ cup teriyaki sauce
3 pkg (3 x 350g) Sunrise Extra Firm Tofu, cut into approximately ½ inch strips
1 red bell pepper, finely diced
1 pkg onion OR bean sprouts (approximately 1 cup)
DIRECTIONS
1. With a spatula, spread 2 tablespoons of cream cheese onto flour tortilla. Make sure cream cheese is spread evenly over the entire tortilla.
2. Place 6-8 strips of sliced corn, a sprinkle of green onions and a few drops of Teriyaki sauce about ¾ inch away from the tortilla edge. The ingredients should form a row across the tortilla.
3. Make the next row about ¾ inch away from the corn with approximately 8 tofu strips (use ¼ of one package).
4. Make the final row about ¾ inch apart from the tofu with diced peppers (about ½ Tbsp.), topped with sprouts (about 1 Tbsp.) and a few drops of teriyaki sauce.
5. Now the tortilla can be rolled. Roll the edge of the tortilla over top of first row and wrap tightly. Then keep rolling over each row, pressing tightly until the tortilla is fully rolled. If the end flap does not stick, put a bit more cream cheese on it.
6. Repeat the above steps with the remaining tortillas and ingredients.
7. As an appetizer option, cut wraps into ½ inch slices
Tip: it cuts more easily after refrigeration (approx. for 1 hour)
