INGREDIENTS
1 pkg (454g) Sunrise Medium Firm Tofu or 1 and 1/3 pkg of Soyganic Premium Medium Firm Tofu
300g frozen chopped spinach, defrosted
1 Tbsp. vegetable oil
1 pkg (200g) Soyganic Smoked Tofu, finely grated
1 pkg (40g) onion soup mix
1 cup of mixed shredded cheese (mozzarella, cheddar, and Monterey Jack)
½ cup light mayonnaise
DIRECTIONS
1. Preheat oven to 350°F
2. Sauté the smoked tofu in a frying pan until crispy. Set aside.
3. Put the tofu in a food processor and blend until smooth. Transfer tofu to a medium bowl
4. Add the smoked tofu, spinach, soup mix, cheese and mayo to the tofu and mix well.
5. Bake in an oven proof bowl for 20-25 minutes or until it starts to bubble
6. Serve with pita bread or pita chips
