Smoked Tofu Cobb Salad

Replace the fatty bacon in your cobb salad wtih Soyganic Smoked Tofu. This recipe is particularly good with the same great smoky taste of bacon (in Smoked Tofu) mixed together romaine lettuce, tomato, avocado, green onions and chicken (optional - omit to make this a vegan recipe).

Prep Time: 15 min  Cook Time: 10 min   Servings: 6

INGREDIENTS 

1 pkg Sunrise Smoked Tofu, sliced
1 tsp vegetable oil
2 chicken breasts, cooked and diced (omit to make this a vegan recipe)
6 cups romaine lettuce, chopped
2 tomatoes, chopped
2 ripe avocadoes, diced
2 green onions, chopped
Dressing of your choice (optional)

DIRECTIONS

1. Pan-fry smoked tofu on both sides until crispy and brown
2. Evenly divide and arrange chicken, tomatoes, smoked tofu, avocado and green onions in a row on top of the shredded lettuce.
3. Drizzle with dressing of your choice or serve it as a side dish ¾ tsp pepper

Note: This is a non-vegan recipe due to chicken used in it. Omit the chicken breasts for a vegan option.
