This tofu quesadilla is super speedy to throw together, a perfect solution for a “I don’t have time to cook” situation. In this recipe we used pantry staples; salsa and canned corn, but feel free to throw in whatever veggies or toppings you have in your fridge. Sour cream and guacamole are a great complement, but the quesadilla is also nice on its own. A handful of mixed greens on the side, and you have a complete meal in minutes.

INGREDIENTS
½ cup Salsa
1 pkg (350g) Sunrise Extra Firm Tofu (crumbled)
1 small can kernel corn
1 tsp. olive oil
4 large (10 inch) flour tortillas
1-1/2 cups low-fat, shredded cheddar cheese
DIRECTIONS
1. Heat oil in a 12-inch skillet over medium-high heat.
2. Crumble ¼ pkg of extra firm tofu over each flour tortilla
3. Divide the salsa (about 1/8 of a cup) and canned corn evenly between the 4 tortillas and top with cheese.
4. Lay one of the open-faced tortillas in the skillet. Cook for one minute.
5. Using tongs, fold tortilla in half. Cook for another minute and flip. Cook for another minute or until cheese is melted.
6. Remove tortilla from the skillet and serve. Repeat cooking procedure for the remaining tortillas.
