Ingredients

  • 1 pkg Sunrise Soft Tofu (Western Canada) (300g) blended
  • 250 mL (1 cup) water
  • 375 mL (1½ cups) store-bought pancake mix
  • 15 mL (3 tsp) baking powder
  • 10 mL (2 tsp) honey
  • Non-stick cooking spray (for greasing)

Directions

  1. Preheat a lightly greased griddle or frying pan over medium-high heat.
  2. In a bowl, whisk together all the ingredients (except the cooking spray) until well combined.
  3. Pour or scoop the batter onto the hot pan. Brown on both sides and serve hot. Serve with fresh fruit of your choice. Makes approximately twelve 4” pancakes.
