Ingredients
- 1 pkg Sunrise Soft Tofu (Western Canada) (300g) blended
- 250 mL (1 cup) water
- 375 mL (1½ cups) store-bought pancake mix
- 15 mL (3 tsp) baking powder
- 10 mL (2 tsp) honey
- Non-stick cooking spray (for greasing)
Directions
- Preheat a lightly greased griddle or frying pan over medium-high heat.
- In a bowl, whisk together all the ingredients (except the cooking spray) until well combined.
- Pour or scoop the batter onto the hot pan. Brown on both sides and serve hot. Serve with fresh fruit of your choice. Makes approximately twelve 4” pancakes.
