  • 1/4 pkg Sunrise Extra Firm Tofu (350g) crumbled
  • 60 mL (1/4 cup) basil pesto sauce
  • 1 piece flatbread or naan bread
  • 6-8 cherry tomatoes, sliced
  • 125 mL (1/2 cup) bocconcini cheese, sliced
  • 8-10 fresh basil leaves


  1. Preheat the oven to175ºC (350°F).
  2. Mix 30 mL (2 Tbsp.) of basil pesto and crumbled tofu together, set aside. Spread remaining pesto sauce over the flat bread.
  3. Evenly place the tomatoes, tofu mixture and cheese on top. Bake for 5-10 minutes or until the cheese has melted.
  4. Top with fresh basil and serve.
