Ingredients

  • 1 pkg Soyganic Soft Tofu (2x150g) blended
  • SALAD DRESSING INGREDIENTS
  • 1 clove garlic, minced
  • 5 mL (1 tsp) Worcestershire sauce
  • 15 mL (1 Tbsp) Dijon mustard
  • 30 mL (2 Tbsp) anchovy paste
  • 30 mL (2 Tbsp) lemon juice
  • 45 mL (3 Tbsp) olive oil
  • 30 mL (2 Tbsp) Parmesan cheese, grated
  • pinch of salt and pepper
  • SALAD INGREDIENTS
  • 1 head Romaine lettuce, washed and dried
  • 500 mL (2 cups) croutons
  • 30 mL (2 Tbsp) parmesan cheese, grated

Directions

  1. Blend all salad dressing ingredients along with the tofu together until smooth and creamy.
  2. Tear lettuce leafs into bite-size pieces. Toss lettuce with desired amount of dressing and croutons.
  3. Sprinkle Parmesan cheese on top and serve cold.
