Ingredients

  • 1 pkg (300g) Sunrise Traditional Sweetened Tofu Dessert(2x150g)
  • 125 mL (1/2 cup) margarine (room temperature)
  • 250 mL (1 cup) sugar
  • 125 mL (1/2 cup) molasses
  • 1 mL (1/4 tsp) salt
  • 5 mL (1 tsp) cinnamon
  • 1 mL (1/4 tsp) clove
  • 5 mL (1 tsp) ginger
  • 10 mL (2 tsp) baking powder
  • 1 mL (1/4 tsp) baking soda
  • 500 mL (2 cups) flour
  • 15 mL (1 Tbsp) sugar for topping
  • 30 mL (2 Tbsp) icing sugar (optional)

Directions

  1. Preheat oven to 175ºC (350°F).
  2. Using a mixer, mix together the dessert tofu, margarine, sugar, and molasses until smooth. Set aside.
  3. In a separate bowl, mix together the remaining dry ingredients. Pour dry ingredients into the wet ingredients and mix until well combined.
  4. Pour into an 8x8 greased pan. Sprinkle reserved 15 mL (1 Tbsp) sugar on top. Bake for 40-45 minutes or until a toothpick near the center comes out clean.
  5. Cool and serve. Dust with icing sugar if desired.
