- 3/4 pkg (350g) Sunrise Medium Firm Tofu (454g) crumbled
- 2 ripe, medium-sized avocados, pitted and cubed
- 2 ripe, medium-sized mangos, pitted and cubed
- 22 g (2 Tbsp) canned/jarred roasted red pepper, chopped
- 30 mL (2 Tbsp) olive oil
- 30 mL (2 Tbsp) balsamic vinegar
- 3 mL (1/2 tsp) salt
- 15 mL (1 Tbsp) brown sugar
- 1 bag (300 g) tortilla chips
- In a large bowl, combine all ingredients. Gently mix until well combined. Cover and refrigerate for 1 hour.
- Spoon ingredients into individual glass cups or bowls. Serve with tortilla chips.
