Ingredients

  • 1 pkg Sunrise Marinated Tofu (320g) cubed
  • 30 mL (2 Tbsp) olive oil
  • 125 mL (1/2cup) red bell pepper, chopped
  • 4 stems green onions, chopped
  • 2 cloves garlic, minced
  • 5 mL (1 tsp) ground coriander
  • 2 mL (1/2 tsp) turmeric
  • pinch of cayenne
  • 500 mL (2 cups) vegetable stock
  • 250 mL (1 cup) quick cooking couscous
  • 30 mL (1 Tbsp) margarine or butter
  • salt and pepper to taste
  • almonds, coarsely chopped
  • parsley, chopped
  • lemon, wedges
  • 250 mL (1 cup) frozen peas

Directions

  1. In a large pot, heat oil on medium heat. Add bell peppers, green onions, garlic, coriander, turmeric and cayenne. Sauté for 3-4 minutes, stirring occasionally.
  2. Add cubed tofu and cook for another 4 minutes. Add peas and sauté for another 2 minutes.
  3. Add vegetable stock and bring to a boil. Mix in couscous and margarine or butter. Cover and remove from heat, let stand for 5 minutes or until most liquid is absorbed
  4. Using a fork, fluff couscous. Add salt and pepper to taste. Garnish with almonds, parsley and lemon wedges. Serve hot.
