  • 1 pkg Sunrise Extra Firm Tofu (350g) sliced
  • 60 mL (1/4 cup) peanut butter
  • 60 mL (1/4 cup) rice wine vinegar
  • 15 mL (1 Tbsp) sriracha
  • 15 mL (1 Tbsp) soy sauce
  • 60 mL (1/4 cup) olive oil
  • 15 mL (1 Tbsp) peanut oil
  • pinch of salt
  • 15 mL (1 Tbsp) mirin (Japanese rice wine)
  • 15 mL (1 Tbsp) rice vinegar
  • 15 mL (1 Tbsp) sriracha
  • 1,000 mL (4 cups) salad greens
  • 125 mL (1/2 cup) lentils, cooked
  • Any other chopped vegetables you desire in your salad


  1. In a small bowl, mix peanut butter, rice wine vinegar, 15 mL (1 Tbsp) sriracha, soy sauce and olive oil together. Set aside.
  2. Drain tofu, lightly squeeze tofu to remove excess moisture. Slice tofu thinly, approximately 10-12 pieces and then cut all slices in half.
  3. Heat a pan over medium heat and add peanut oil. When oil is hot, place tofu slices in oil and sprinkle with salt. Make sure the tofu is spread out and not overlapping in the pan.
  4. Once the tofu is browned on all sides, reduce heat. Add mirin, vinegar and 15 mL (1 Tbsp) sriracha. Toss to coat tofu pieces as evenly as possible and turn off the burner. Let tofu sit in the hot pan as you prepare the greens.
  5. In a large bowl, mix the greens, cooked lentils and any other vegetables together. Toss with the salad dressing and top with pan-fried tofu.
