Ingredients

  • 1 pkg Soyganic Smoked Tofu Original (210g) sliced into medium sized cubes
  • 1 bunch kale, stems removed
  • 2 Tbsp (30 mL) olive oil
  • Dressing :
  • 1/3 cup (75 mL) extra-virgin olive oil
  • 3 Tbsp (45 mL) lemon juice
  • 1 tsp. (5 mL) lemon zest (optional)
  • 1 Tbsp. (15 mL) miso paste
  • 1 clove garlic, minced
  • 2 tsp. (10 mL) stone-ground mustard
  • 1 Tbsp (15 mL) maple syrup
  • pinch of pepper
  • pinch of salt

Directions

  1. In a bowl whisk together all the dressing ingredients
  2. Remove stems from kale, and slice thinly, place in a large bowl
  3. Add 2 Tbsp (30 mL) olive oil over the kale and massage salad with your hands (this enhances kales flavor and softens the leaves)
  4. Toss with the dressing and the sliced tofu and serve
