easy Starters Sunrise Pressed Tofu (340g)

Ingredients

  • 1/2 pkg Sunrise Pressed Tofu (340g) cubed
  • 45 mL (3 Tbsp.) low fat, cholesterol free mayonnaise
  • 15 mL (1 Tbsp.) fresh lemon juice
  • 2 mL (1/2 tsp.) salt
  • 1 mL (1/4 tsp.) fresh ground pepper
  • 1 green apple, diced
  • 125 mL (1/2 cup) celery, thinly sliced
  • 60 mL (1/4 cup) raisins
  • Lettuce leaves

Directions

  1. In a medium sized bowl, whisk together mayonnaise and lemon juice.
  2. Add salt and fresh ground pepper.
  3. Mix in the apple, celery, tofu, and raisins until fully coated with the dressing.
  4. Serve atop a bed of lettuce.
