- 1/2 pkg Sunrise Pressed Tofu (340g) cubed
- 45 mL (3 Tbsp.) low fat, cholesterol free mayonnaise
- 15 mL (1 Tbsp.) fresh lemon juice
- 2 mL (1/2 tsp.) salt
- 1 mL (1/4 tsp.) fresh ground pepper
- 1 green apple, diced
- 125 mL (1/2 cup) celery, thinly sliced
- 60 mL (1/4 cup) raisins
- Lettuce leaves
- In a medium sized bowl, whisk together mayonnaise and lemon juice.
- Add salt and fresh ground pepper.
- Mix in the apple, celery, tofu, and raisins until fully coated with the dressing.
- Serve atop a bed of lettuce.
